Gingerbread Cookies

I don’t care what people say, gingerbread cookies are good all year ’round. It would be a crime to limit the consumption of these delicious treats exclusively to the holiday season.

Gingerbread cookies normally require molasses to make, but these don’t. This would be the only recipe I’d ever use it for, so I don’t really want to keep that black glue in my cupboard all the time. I searched long and hard for an alternative recipe that wouldn’t leave me with leftovers of unwanted ingredients, and here it is. Although a bit different, these smell and taste just as delicious as a traditional recipe.

Carrot Cake or Muffins

I don’t know about you, but I hate raisins. Why do they have to always ruin my desserts? And nuts? I’m not a big fan. It seems there doesn’t exist a carrot cake recipe that doesn’t include one or both of these. It’s something about the cake needing them for the texture or some silly business like that.

Well, I say hogwash! It can be done! Carrot cake lovers and raisin/nut haters, search no more!

Spice Muffins or Cake

I’ve always loved spice cake, but it tends to include nuts and/or raisins – which I don’t love. I’ve searched far and wide for recipes that didn’t include these, but they’ve never come close to that fantastic flavor of a good spice cake.

Finally, here it is, my holy grail of spice cake recipe!

Apple Muffins

So apple-picking season is over, are you tired of them yet? Why not turn them into something different, like these light, sweet muffins?

This is probably the recipe that started my baking kick. I had an apple lying around and it was getting a little old, but I didn’t want to throw it away. A little light bulb went on it my head and then poof, muffins! This recipe works equally well with firm, fresh apples.

Blueberry Crumble Muffins

I tend to look up recipes from various places and than make changes in order to adjust them to my taste. It can be adding a bit more of an ingredient to enhance the flavor or just more baking powder so they get fluffier. These muffins however, were perfect from the original recipe.

You might think combining blueberries and cinnamon is a little weird, which I agreed with until I tried these. The only thing I would mention is that it tones down the blueberry flavor a good bit. Not a problem though, because if you want straight-up blueberry muffins, these are great even without the topping.

You should still try them with the topping at least once though, it’s really awesome 🙂 .

Cinnamon Doughnut Muffins

I came across this recipe while I was desperately searching for a good spice muffin recipe. All the ones I found were weak and unimpressive, so I tried finding a recipe that used really different ingredients instead. The result was not at all what I was looking for, but great nonetheless.

I call these “cinnamon doughnut muffins” because they have a more dense texture than regular muffins, and in combination with the cinnamon and sugar topping, they remind me of good old-fashioned doughnuts.

Aside from the fact that they taste awesome, I really love these because they’re easy to make and you just about always have everything you need on hand to make them.
