Ever have more yogurt than you actually want to eat before it expires? This recipe comes to your rescue!

It also happens to be really quick to make and tasty. You can mix flavours too if you have a bunch of single-serving cups on hand. Most will work pretty well together.

Lemon and Blueberry Muffins

Rated 4 out of 5 by 2 people

Yes, those muffins pictured are blueberry, not chocolate. As you can see, there’s a lot of blueberries in these. Combined with the lemon, the blueberry flavor is enhanced even more.

I was very pleased with this recipe, especially considering I originally sought it out so I could use leftover crême fraîche. I’ve made a few lemon muffins and blueberry muffins in the past (which I love) and this was similar to neither of those, and yet that was still a good thing.

Strawberry Muffins or Cake

Rated 5 out of 5 by 2 people

Every time I have someone try these muffins, I get the comment “Wow, you can really taste the strawberries in these!” followed by the question “Do you use real strawberries?” Yes, I do. 🙂

I might be biased because I love strawberries, but these are definitely one of my very favorite muffins. And as a cake topped with stawberry frosting, it makes a really nice and different dessert.

Carrot Cake or Muffins

Rated 4.5 out of 5 by 2 people

I don’t know about you, but I hate raisins. Why do they have to always ruin my desserts? And nuts? I’m not a big fan. It seems there doesn’t exist a carrot cake recipe that doesn’t include one or both of these. It’s something about the cake needing them for the texture or some silly business like that.

Well, I say hogwash! It can be done! Carrot cake lovers and raisin/nut haters, search no more!

Apple Muffins

Rated 4 out of 5 by 2 people

So apple-picking season is over, are you tired of them yet? Why not turn them into something different, like these light, sweet muffins?

This is probably the recipe that started my baking kick. I had an apple lying around and it was getting a little old, but I didn’t want to throw it away. A little light bulb went on it my head and then poof, muffins! This recipe works equally well with firm, fresh apples.

Blueberry Crumble Muffins

Rated 5 out of 5 by 2 people

I tend to look up recipes from various places and than make changes in order to adjust them to my taste. It can be adding a bit more of an ingredient to enhance the flavor or just more baking powder so they get fluffier. These muffins however, were perfect from the original recipe.

You might think combining blueberries and cinnamon is a little weird, which I agreed with until I tried these. The only thing I would mention is that it tones down the blueberry flavor a good bit. Not a problem though, because if you want straight-up blueberry muffins, these are great even without the topping.

You should still try them with the topping at least once though, it’s really awesome 🙂 .

Sweet Pancakes

Rated 5 out of 5 by 2 people

My favorite Breakfast for Dinner meal!

When my mom was little, her family couldn’t afford syrup, so her mom came up with the idea to make sweet pancakes using brown sugar. Brown sugar has a lot more to its flavor than regular sugar, so it really adds a lot of taste to these pancakes.

To this day, this remains one of my and my siblings’ favorite treats.
